Blueberry Heaven on Earth Cake Recipe

Ingredients

Cake Layer

  • 1 angel food cake (store-bought or homemade)
  • Cut into 1-inch cubes

Blueberry Layer

  • 1 can blueberry pie filling
    OR
  • 4 cups blueberries
  • ½ cup sugar
  • ¼ cup water
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 1 tbsp water

Cream Layer

  • 1 package vanilla pudding mix
  • 2 cups milk

Whipped Layer

  • 2 cups whipped cream or whipped topping

Topping

  • ¼ cup toasted sliced almonds (optional)

Instructions

  1. Prepare the Cake
    Cut the angel food cake into small 1-inch cubes.
  2. Reserve Blueberry Filling
    Set aside 3 tablespoons of blueberry filling to swirl on top later.
  3. First Layer
    Place half of the cake cubes in a 9×13 baking dish.
  4. Add Blueberries
    Spread the blueberry filling evenly over the cake layer.
  5. Second Cake Layer
    Add the remaining cake cubes on top of the blueberries.
  6. Add Cream Layer
    Prepare vanilla pudding according to package directions and spread over the cake.
  7. Add Whipped Layer
    Spread whipped cream evenly over the pudding layer.
  8. Swirl the Top
    Spoon the reserved blueberry filling on top and gently swirl.
  9. Chill
    Refrigerate for at least 4 hours or overnight.
  10. Serve
    Sprinkle toasted almonds on top before serving if desired.

Notes

  1. Frozen blueberries can be used if making homemade filling.
  2. This dessert is best when chilled overnight.
  3. Store leftovers in the refrigerator for up to 2 days.
